I don't know why but recently, I've been wanting to do things out of the ordinary.
Ok, maybe not things that I usually won't do. I've been wanting to bake since forever but it's either that I don't know what the ingredients are or there are way too many steps.
But I've found a simple recipe to deal with the leftover peppermint chocolates in your refrigerator, so I decided to give it a try. Not that I have peppermint chocolates left in my fridge, but the recipe was easy to follow.
And peppermint flavoured chocolate muffin is unique!
So if any of you would like to try this, here are the steps.
Ingredients:
8 ounce of bittersweet or semi sweet chocolates, coarsely chopped
1/2 cup or 1 stick unsalted butter
1 cup white granulated sugar
3/4 teaspoon salt
3 eggs
1/2 cup all purpose flour
1/4 cup unsweetened cocoa powder
12 peppermint chocolates
All these are items you can find from home. But if you aren't those who bake frequently, just hop down to the nearest NTUC to purchase them. Convenient eh?

Melt the butter and chocolate in a small sauce pan. Stir continuously while it melts so the chocolate doesn't burn.
I placed my pot in another pot of water, so I don't have to stir it constantly.
Note: Just add the entire stick of butter in. DO NOT think about the consequences of eating the muffins. After all, you're baking for your loved ones.

P.S. Again, do not worry about the sugar content. It's all about the end result and letting your loved ones try the muffins you have baked from scratch.
I used more than 1/4 cup of cocoa powder to get the chocolaty taste. (:
When the batter is ready, place one tablespoon of the batter in each muffin cake.
And fill the rest of the cup with another 1-1/2 tablespoon of batter, until they are filled with batter.
Bake at 125 degrees F for about 20-25 minutes, until the top cracks.
The white spots are the peppermint from the chocolates. They're sort of oozing out.
Ok, it isn't double chocolate. My muffins were slightly burnt at the top, so watch your muffins as they bake.
This was the first batch of muffins and I baked them for only 15 minutes at 175 degrees F. The recipe stated "bake at 350 degrees for 30-35 minutes".
Too bad too sad, that's all the peppermint chocolates I've bought so I baked the 2nd batch of muffins with semi sweet chocolate chips in the middle.
This time at 125 degrees F, and Guan said not to walk away from the oven.
So there he sits, playing his PSP while watching the muffins bake.
They were baking so perfectly, the perfect colour and perfect sizzle (the butter was bubbling away).
Knowing that he will watch the muffins, I went into my room to cool down. It was super warm in the kitchen and the heat radiating from the oven wasn't helping.
Then he shouted.
My chocolate muffins were burnt more severely than the peppermint ones. So much for watching the muffins bake. I bet he watched his PSP more. Never trust him with tasks when he has his gaming devices with him.
And so, time to give out the sinful muffins to my loved ones. My dad loves the peppermint muffins!
He said it was good. (: He's my ultimate supporter.
